Open Faced Roast Beef Sandwich

What you need:

+ 1 lb. Certified Angus Beef ® deli roast beef sliced thin
+ 1 (14 oz.) can artichoke heart, drained and chopped
+ olive oil, as needed
+ 2 Roma tomatoes, diced
+ 4 slices sourdough bread
+ 1/2 lb. smoked mozzarella cheese, sliced thin
+ 4 Tbsp. herbed cream cheese
What to do:
1. Preheat oven to 350°F. Brush bread with olive oil and toast 3-5 mins. until lightly browned.
2. Top each slice of toast with 1 Tbsp. herb cream cheese, 4 oz. roast beef (or approximately 3 slices), 1 Tbsp. chopped artichoke hearts, and 2 slices or 2 oz. mozzarella cheese. Place on cookie sheet and bake open-faced for 10 mins., or until cheese browns.
3. Garnish with diced tomatoes. Serve with your favorite pasta salad.
